“There was a traumatic incident that made me stop eating beef. My parents were banding cattle. When I asked why, I was told that it makes them bigger. And it hit me that these cute little animals that were running around playing would become someone’s dinner. Eating them made me feel guilty.”

Avoiding meat isn’t an automatic ticket to having a lean body. Vegetarianism can include French fries, fried onion rings, deep-fried burritos, pizza and beer. In Carrie Underwood’s case, she avoids pizza, traditional southern foods, and junk foods, and enjoys veggie burgers, soysauge and protein bars. She’s been known to have Diet Coke with breakfast.

In it are documentations of everything she eats, such as two waffles for breakfast, and a tofu/cheese sandwich on bread for lunch. Right after a meal, she enters the calorie values of everything she’s eaten to avoid forgetting any of it.

The Carrie Underwood diet includes a lot of nighttime eating. This sounds encouraging to those wishing to look like the multi-platinum selling recording star, because she admits: “I’m a big nighttime eater.”

However, there’s a big catch, too: She explains, “When I can look at my diary and see how many calories I’ve consumed during the day, I’m able to figure out how much I can eat at night.”

This means that if she’s had a lot to eat during the day, then she has to skimp on nighttime eating—based on calorie counts.

She admits to using a web site that has calorie counts for all the restaurants and fast food places. The singer uses this site religiously to check not only calories, but carbs and fat content for every dish, so that “I’m always prepared,” she adds.

Is this really the best method of weight control? I wonder how long poor Carrie will hold out like this. I picture her panicking if she loses or forgets that notebook. What will she do then?
